With the days finally getting cooler, I’ve been hanging in more with Paul and BINGO while trying to cook regularly. It’s an easy way for us to save money and an efficient way to cut back on calories because I see what I’m putting into my food.
Now I grew up eating A LOT of rice.
My parents are Chinese, but they were born and raised in Calcutta, India. Which means we ate both Asian and Indian dishes! Most nights it was steamed rice with stir-fried veggies and meat. For special occasions or family celebrations, my uncle would make biryani and his famous Indian beef curry for our big potluck family get-togethers.
Rice is an easy choice because it’s nutritious, affordable, and versatile. It’s also naturally gluten-free, fat-free, and a sodium-free meal choice.
I LOVE to cook, but I truly enjoy it when I have the time and don’t feel rushed. This is definitely something you can prep and make ahead of time. I like making a big batch on a Sunday night and adding veggies and meat to it for easy bowls I can eat all week. If you’re unsure, here’s a handy video on how-to cook and how-to freeze rice.

1) Cauliflower + Chickpea Curry
Not sure what to do with chickpeas? I love this curry recipe for a meatless Monday meal idea. It’s fully of hearty cauliflower; chopped tomatoes and chickpeas in a silky light curry over fluffy steamed rice. Perfect comfort food!
2) Bibimbap Rice Bowl
This Korean-style rice bowl is one of my favourite things of all-time. I love the variety of vegetables, egg and beef for a hearty and complete meal in a bowl.
3) BBQ Bag Biryani
Just because summer is over, doesn’t mean you have to stop using your BBQ! This flavourful Indian rice dish is the perfect accompaniment to grilled chicken or fish. If you don’t want to trek out to your BBQ, you can most definitely use your oven.
4) Mushroom Risotto with Lemon + Fresh Peas
This savoury mushroom risotto recipe would be great to make at the start of the week for lunches you can enjoy at work all week. Lemon zest and cheese gives this dish lots of flavour.
5) Fig + Raspberry Rice Pudding
Rice pudding is a classic dessert for me. This fig + raspberry rice pudding recipe is dairy-free and uses vanilla rice milk to add flavour and creaminess.
